Hot and sour soup

Ingredients
- 2 tablespoon olive oil
- 2 tablespoon fresh green beans, finely chopped
- 1 tablespoon mushrooms, finely chopped
- ½ cup cabbage, finely chopped
- ½ cup carrots, very finely chopped
- ½ teaspoon red chilli powder, or to taste
- 2 teaspoon soy sauce, to taste
- 1 tablespoon tomato purée
- 1 tablespoon sugar
- 1 tablespoon cider vinegar
- 1 teaspoon salt, to taste
- 3-4 cups water
- 1 tablespoon cornflour or rice flour (optional)
Directions
- Heat the oil in a pan and sauté the green beans and mushrooms.
- Add cabbage and carrots and sauté for 2 more minutes.
- Add all the other ingredients and bring to the boil. Simmer for 5 minutes and serve.
- For a thicker consistency, mix 1 tablespoon of cornflour or rice flour with ½ cup of soup stock and return it to the pan. Simmer for a few more minutes.
- Serve hot.
