Pulau Rice

Quick says it all. Maureen shows us how to make a simple favorite quickly: Pulau Rice.

Ingredients
- 4 ounces basmati rice
- 2 tablespoon olive oil
- 1 teaspoon mustard seeds
- ¼ teaspoon cumin seeds
- pinch of asafoetida or hing
- 2 oz frozen mixed vegetables
- 1 teaspoon salt
- 2 teaspoon fresh grated ginger
- 2 cups or 400ml water
- ½ cup raisins (optional)
Directions
- Heat a heavy bottom saucepan
- Add olive oil, mustard seeds and cumin seeds and let the seeds pop
- Add vegetables, salt, hing and ginger.
- Stir thoroughly
- Add raisins, water and rice
- Reduced temperature, cover pan
- Cook for 20 to 30 mins or until rice thoroughly cooked, stirring every 10 mins
