Banana Bread

A scrumptious quick vegan banana nut bread. Best eaten sliced, toasted, with vegan butter, like bread.

Ingredients

Dry ingredients

  1. 2 ½ cups flour
  2. 1 ½ teaspoon salt
  3. 1 ¼ teaspoon baking soda

Wet ingredients

  1. 1/2 cup oil
  2. 3/4 cup brown sugar
  3. 2 cups mashed bananas
  4. 1 teaspoon vanilla extract

Optional ingredients

  1. 1/2 cup chocolate chips
  2. 1/2 cup chopped walnuts
  3. 1/2 cup shredded unsweetened coconut

Directions

  1. Preheat oven to 350 degrees Fahrenheit
  2. In a bowl mix the dry ingredients
  3. In a separate bowl whisk all the wet ingredients
  4. Gently mix the dry ingredients into the wet ingredient
  5. Fold in all the optional ingredients (if using)
  6. Oil a standard bread pan
  7. Spoon banana bread mixture into the bread pan
  8. Bake for one hour or until done
  9. Remove from oven and leave in pan to cool for 10 mins
  10. Remove from pan when bread cooled
