Quick fruit fix

  1. 1-2 apples
  2. 1 pear
  3. 2-3 plums
  4. 2-3 peaches
  5. ½ cup caster sugar
  6. a handful of mixed berries
  7. cloves and/or ground cardamom, optional

For the cream

  1. 1 cup Greek yoghurt
  2. 3-4 tablespoon double cream
  3. 2 teaspoon vanilla essence
  4. 2-3 tablespoon icing sugar


  1. Cut the apples, pear, plums and peaches into small pieces; no need to peel them.
  2. Place the cut fruits into a pan on medium heat, add caster sugar and allow them to cook. Do not cover.
  3. Add the berries approximately 5 minutes later. Add cloves and/or cardamom, if you want to use them, at this point.
  4. Once the fruit mix starts boiling, turn off the heat. Do not overcook.
  5. Prepare the cream by whisking the yoghurt, double cream, vanilla essence and icing sugar together.
  6. Serve when fruits are warm or cold.
