Savoury Vegetable Vermicelli

A quick and easy, breakfast or side dish. Savoury vermicelli is as tasty as it is simple to make.

  1. Vermicelli
  2. ½ cup chopped green pepper
  3. ½ cup chopped red pepper
  4. chopped Zucchini
  5. chopped carrots
  6. broccoli
  7. chopped tomatoes
  8. Pepperoncino (optional)
  9. cumin seeds (optional)


  1. In a pot of boiling water add a pinch of salt and the vermicelli. Cook until the vermicelli goes transparent, which should only take a few minutes.
  2. Drain the pasta and cover with a towel to keep it warm.
  3. Put 2 tbsp olive oil or butter in a pan and add a little pepperoncino
  4. Add the cumin seeds
  5. Add the broccoli, carrots, zucchini, red and green peppers
  6. Add a little salt, then add the chopped tomatoes.
  7. Fry for a few minutes then turn the heat off
  8. Add the vermicelli pasta and mix together
