Maple Cookies Recipe

Ingredients

  1. 2 bars softened butter
  2. 1 cup light brown sugar
  3. 1 cup maple syrup
  4. 1 teaspoon vanilla
  5. 1 ½ teaspoon egg replacer ( = 1 egg)
  6. 4 cups all- purpose flour
  7. ½ teaspoon salt
  8. 2 teaspoon baking soda
  9. ½ cup oatmeal
  10. granulated sugar

Directions

  1. Add the softened butter into a bowl
  2. Add the light brown sugar
  3. Mix with a hand blender for 2-3 minutes until creamy
  4. Add the maple syrup
  5. Add the vanilla
  6. In a separate small bowl, mix the egg replacer with 2 tablespoons of warm water
  7. Once mixed add to the other mixture and mix altogether with a hand blender for about 1-2 minutes
  8. Sift the flour, salt and baking soda and add to mix together with the other ingredients
  9. Mix with a hand blender and add the oatmeal
  10. Mix again with the hand blender, it will form a stick mixture
  11. On a tray, place a sheet of baking paper
  12. Take 1 tbsp of the mixture and make a small ball
  13. Roll the ball in the granulated sugar and shake off any excess sugar
  14. Place on the baking sheet leaving a gap of 1-2 inches as the expand while cooking
  15. With the back of a bowl/plate flatten the ball slightly
  16. Put the tray in the oven at 350 degrees for 10 minutes or 15 minutes for an extra golden colour
