Pasta Bake

Ingredients
- 1 packet Pasta
- 2 cups mixed cheese
- 1 cup chopped carrots
- 1 cup chopped zucchini
- 1 cup yellow squash
- 1 1/2 cup mixed peppers, red, yellow, green
- 1 cup diced fresh tomatoes
- 1 head of broccoli
- 1 can crushed tomatoes
- 1 cup parsley
- 2 tablespoon dried oregano
- 1/2 cup fresh basil
- 1 teaspoon dried oregano
- 4 tablespoon olive oil
Directions
- In a pan put 4 tbsp olive oil, heat the oil
- Add 1 tsp dried oregano and 1/2 tsp black pepper
- Add the yellow squash, carrots, zucchini and broccoli
- Mix together and add 2 tsp salt
- Keep mixing and cook for about 5 minutes
- Add the can of crushed tomatoes and fresh diced tomatoes
- Mix together and leave on low heat for 5 minutes
- Take off the heat and put in a bowl
- Add the pasta, mixed peppers, parsley, basil and fresh oregano to the vegetables and mix well together
- Transfer to a baking dish
- Drizzle a little olive oil over the top
- Sprinkle the cheese on top
- Bake for 15 minutes at 400 degrees
