Upma – traditional Indian dish made of semolina and various vegetables – gives you energy for the whole day.

Ingredients

  1. 100 grams semolina
  2. 100 grams finely cut carrots
  3. 100 grams finely chopped cabbage
  4. 100 grams cooked green peas
  5. 4 tablespoon oil
  6. ½ tablespoon Lemon juice
  7. 2 teaspoon ground coriander
  8. 1 teaspoon cumin
  9. 1 teaspoon ground cinnamon
  10. ground asafoetida
  11. chopped chinese parsley
  12. chilli
  13. 1 teaspoon salt
  14. Pine nuts (it is also possible to use peanuts or cashew nuts)
  15. 2 tablespoon tomato paste
  16. 200 millilitres water

Directions

  1. Heat the oil in a frying pan for few seconds and add cumin, salt, cinnamon and the vegetables. Fry for a little while by stirring well.
  2. Sprinkle some water into the mixture and cover the pan using a lid and let it stew for 3- 4 minutes.
  3. Add the semolina and fry the mixture by stirring well.
  4. Add tomato paste and pine nuts, mix well.
  5. Add coriander and combine well.
  6. Combine water and Chinese parsley to the mixture and stir it well. Let it cook for few minutes, add some lemon juice and stir it again.
  7. Once cooked turn the cooker off and leave the Upma covered for 5-7 minutes before serving.
