Butternut Squash Lentil Soup

Ingredients
- a small butternut or half if large - peeled and diced
- 1 tablespoon oil
- 1/3 cup white cabbage
- 3/4 cup red lentils
- 1/3 cup parsley
- 1 teaspoon thyme
- 1 teaspoon salt
- 1/4 teaspoon black pepper
- pinch of cayenne (optional)
- 5 cups water
- 4 bay leaves
Directions
- Heat a heavy bottom pan
- Add oil, sauté cabbage, washed lentils, diced butternut, salt, thyme, black pepper, water
- Cover pan and cook for 30 minutes, stirring every 10 mins
- Cook until butternut squash is soft to touch
- Add parsley (reserve some for garnish) and remaining ingredients
- Place all the ingredients in a bowl and blend with a hand blender or pass through a sieve
- Garnish with cayenne and parsley
