Soup Sabji

Ingredients
- Boiled potatoes (diced into cubes)
- Tomatoes (diced into cubes)
- Ground coriander
- Turmeric powder
- Cumin powder
- Garam masala
- Fresh ginger (chopped)
- Fresh coriander leaves (chopped)
- Asafoetida
- Salt
- 3-4 tablespoon oil (or butter)
- 1 cup hot water
Directions
- Heat the oil in a sauce pan and add the spices (asafoetida, cumin, turmeric, ginger and salt) and diced tomatoes (tip: you can replace tomatoes with cooked green peas or paneer or canned sweet corn). Sauté for few minutes.
- Add the boiled potatoes and stir the mixture. Close the pan with a lid and let it cook for few minutes
- Pour 1 cup of water and stir the mixture.
- Add some coriander leaves. Leave the pan on low heat for 5 minutes by closing the sauce pan.
- When the sabji is ready season it with some garam masala.
