Truly Delicious Brownies Vegan

These brownies are delicious with a chewy fudgy interior and a crackly top. The trick to getting that crackly top is explained in this video. The recipe is simple and vegan.

Ingredients
- 1 cup chocolate chips
- ¾ cup all-purpose flour
- ¾ cup sugar
- ½ cup unsweetened cocoa
- ¾ cup walnuts
- 1/3 cup oil
- ¼ cup water
- ¼ cup soy yoghurt or applesauce
- 2 tablespoon instant chocolate pudding mix (or corn starch)
- 1 teaspoon instant coffee (optional)
- 2 teaspoon vanilla extract
- ½ teaspoon salt
- ¼ teaspoon baking soda
Directions
- In a small saucepan heat the water, sugar and (coffee optional).
- Next add the oil and bring it to a boil, the surface of this mixture should be shinny.
- Cool the mixture completely before adding the dry ingredients.
- Sieve all the dry ingredients over into wet mixture, all-purpose flour, unsweetened cocoa, chocolate pudding mix, salt, and baking soda.
- Mix thoroughly and add the soy yoghurt or applesauce, then add the vanilla extract.
- Take an 8 X 8 inch baking pan, lightly oil the pan and line with parchment paper, also grease the parchment paper.
- Preheat the oven to 350F/180C.
- Once the mixture has completely cooled mix in the chocolate chips and walnuts.
- Empty the cake mixture into the pan and shake the pan and evenly distribute the mixture.
- Bake at 350F for 25 minutes.
- Cool completely before cutting into pieces.
