Banana Bread

A scrumptious quick vegan banana nut bread. Best eaten sliced, toasted, with vegan butter, like bread.

Ingredients
Dry ingredients
- 2 ½ cups flour
- 1 ½ teaspoon salt
- 1 ¼ teaspoon baking soda
Wet ingredients
- 1/2 cup oil
- 3/4 cup brown sugar
- 2 cups mashed bananas
- 1 teaspoon vanilla extract
Optional ingredients
- 1/2 cup chocolate chips
- 1/2 cup chopped walnuts
- 1/2 cup shredded unsweetened coconut
Directions
- Preheat oven to 350 degrees Fahrenheit
- In a bowl mix the dry ingredients
- In a separate bowl whisk all the wet ingredients
- Gently mix the dry ingredients into the wet ingredient
- Fold in all the optional ingredients (if using)
- Oil a standard bread pan
- Spoon banana bread mixture into the bread pan
- Bake for one hour or until done
- Remove from oven and leave in pan to cool for 10 mins
- Remove from pan when bread cooled
