Savoury Vegetable Vermicelli

A quick and easy, breakfast or side dish. Savoury vermicelli is as tasty as it is simple to make.

Ingredients
- Vermicelli
- ½ cup chopped green pepper
- ½ cup chopped red pepper
- chopped Zucchini
- chopped carrots
- broccoli
- chopped tomatoes
- Pepperoncino (optional)
- cumin seeds (optional)
Directions
- In a pot of boiling water add a pinch of salt and the vermicelli. Cook until the vermicelli goes transparent, which should only take a few minutes.
- Drain the pasta and cover with a towel to keep it warm.
- Put 2 tbsp olive oil or butter in a pan and add a little pepperoncino
- Add the cumin seeds
- Add the broccoli, carrots, zucchini, red and green peppers
- Add a little salt, then add the chopped tomatoes.
- Fry for a few minutes then turn the heat off
- Add the vermicelli pasta and mix together
