Maple Cookies Recipe

Ingredients
- 2 bars softened butter
- 1 cup light brown sugar
- 1 cup maple syrup
- 1 teaspoon vanilla
- 1 ½ teaspoon egg replacer ( = 1 egg)
- 4 cups all- purpose flour
- ½ teaspoon salt
- 2 teaspoon baking soda
- ½ cup oatmeal
- granulated sugar
Directions
- Add the softened butter into a bowl
- Add the light brown sugar
- Mix with a hand blender for 2-3 minutes until creamy
- Add the maple syrup
- Add the vanilla
- In a separate small bowl, mix the egg replacer with 2 tablespoons of warm water
- Once mixed add to the other mixture and mix altogether with a hand blender for about 1-2 minutes
- Sift the flour, salt and baking soda and add to mix together with the other ingredients
- Mix with a hand blender and add the oatmeal
- Mix again with the hand blender, it will form a stick mixture
- On a tray, place a sheet of baking paper
- Take 1 tbsp of the mixture and make a small ball
- Roll the ball in the granulated sugar and shake off any excess sugar
- Place on the baking sheet leaving a gap of 1-2 inches as the expand while cooking
- With the back of a bowl/plate flatten the ball slightly
- Put the tray in the oven at 350 degrees for 10 minutes or 15 minutes for an extra golden colour
