Pulao

An east Indian dish pulao. It contains rice, cauliflower, green peas, carrots, cabbage, cashew nuts, raisins and quite a lot of spices. By cooking this complicated dish you can express your love to your family and friends.

Ingredients
- 200 grams rice soaked in advance
- 100 grams cauliflower
- 100 grams cooked green peas
- 100 grams sliced carrots
- 100 grams shredded cabbage
- cashew nuts
- 2 tablespoon raisins
- 1 teaspoon coriander seeds
- ¼ teaspoon cumin seeds
- ¼ teaspoon cinnamon
- 4 bay leaves
- fresh green chili paste
- 2 teaspoon fresh grated ginger
- ¼ teaspoon cardamom
- 2 tablespoon tomato paste
- 2 cups or 400ml water
- 4 tablespoon olive oil
- 2 teaspoon salt
Directions
- Heat a heavy bottom pan and oil
- Grind cardamom and add to oil and all the remaining spices
- Add chilli and ginger paste
- Add all vegetables and stir thoroughly (except the cabbage)
- Sauté for 2 to 3 mins
- Add rice, salt and mix well
- Add water and stir well
- Add tomato paste, bring to boil
- Reduced temperature, cover pan
- Cook for 20 to 30 mins or until rice thoroughly cooked, stirring every 10 mins
- In a separate saucepan sauté cabbage in oil until crispy
- Mix the nuts, raisins and cabbage into the pulao
- Stir and serve hot
