Irish Soda Bread

Happy St. Patrick's Day! This golden crusted bread with a moist inside is wonderful. Never cared for Irish Soda Bread till I tried this one. You would never know it is vegan - it is so tender inside.

Ingredients
- ¼ cup vegan butter
- 1/3 cup sugar
- 3 cups flour
- 1 ½ teaspoon baking powder
- 1 teaspoon baking soda
- ½ teaspoon salt
- 2 teaspoon caraway
- 1 cup soy yogurt
- 1/3 cup soy milk
- 1 tablespoon vinegar
- ¾ cup raisin
- 1 tablespoon packed light brown sugar
Directions
- Pre-heat the oven to 350 degrees farenheit
- Mix together the butter and sugar
- Sieve 3 cups of flour, baking powder, baking soda, salt
- Mix the sieved ingredients with the butter and sugar with a hand blender
- Make sure there are no big lumps in it
- Add 2 tsp caraway seeds and mix
- In a bowl mix together 1 cup soy yogurt, 1/3 cup soy milk, 1 tbsp vinegar
- Make a well in the middle of the dry ingredients and add the wet ingredients
- First mix together with a spatula then a hand mixure, it should form into a sticky wet dough
- In a bowl add ¾ cup of raisins and a tbsp. flour and coat the raisins.
- Fold the raisins into the dough
- Flour a work surface, transfer the dough and knead for 4-5 minutes
- Make a ball and sprinkle 1 tbsp packed light brown sugar
- Transfer the dough to a baking sheet and make a cross of the top of the dough with a knife
- Bake in a preheated oven at 350 degrees for 50 minutes
