Minestrone soup

Ingredients

  1. 2 Carrots, diced
  2. 250 grams Broccoli, broken into small florets
  3. 125 grams Cauliflower, broken into small florets
  4. 2 potatoes, diced
  5. 1 small turnip, diced
  6. 60 grams canned red kidney beans
  7. 60 grams French beans, cut ½ inch
  8. 3 tablespoon oil
  9. 1 litres boiling water
  10. 1 tablespoon mixed herbs
  11. 2 tablespoon Tomato purée
  12. 125 grams Soya chunks
  13. Salt and pepper, to taste

Directions

  1. Sauté all the vegetables in oil in a fairly large pan for a few minutes.
  2. Add enough water to cover the vegetables and beans.
  3. Add mixed herbs, tomato purée and soya chunks.
  4. Simmer until all the vegetables are cooked. Season to taste and serve.
