Pasta Sauce

Lickabily good pasta sauce. Made with tomatoes and red bell peppers. This sauce does not need any sugar as the sweetness comes from the peppers.

Ingredients

  1. 2 tablespoon olive oil
  2. red chilli flakes to taste
  3. salt to taste
  4. 2 cups fresh or can tomatoes
  5. 2 cups diced red bell pepper
  6. ½ cup water
  7. 1 ½ cups tomato juice (drained from can tomatoes)
  8. ½ cup soya granules
  9. 1/3 cup chopped fresh parsley
  10. 1/3 cup chopped fresh basil
  11. 2 tablespoon fresh oregano
  12. 1 teaspoon dried oregano

Directions

  1. Heat a frying pan, add oil, chili flakes, dried oregano. Sauté for a few seconds.
  2. On medium high flame add tomatoes, diced red bell peppers, fresh oregano, salt and water.
  3. Cover pan and cook for 20 mins, stirring gently occasionally, finally add the reserved tomato juice.
  4. Use an electric blender to grind. Continue cooking to a thick consistency.
  5. Add soya granule, finish with fresh parsley and basil.
  6. Serve sauce with your favourite pasta.
