Thai Salad Recipe

This refreshing and cool Thai salad is wonderful as a side dish or an entire meal. Bebe shows us how easy it is to make.

Ingredients

  1. 1 Large diced red pepper
  2. 1 Large diced tomato
  3. 1 cup thickly striped cabbage
  4. 1 finely diced green chilli (without the seeds)
  5. cup chopped green beans
  6. 1 cup freshly chopped cilantro/ parsley
  7. 2 small limes
  8. Chilli Paste (to taste)
  9. Soy Sauce (to taste)
  10. cup toasted peanuts
  11. 227 grams Rice Noodles (cooked)
  12. Ginger powder (to taste)
  13. 1 teaspoon Honey
  14. 1 teaspoon Mustard
  15. Pinch of Hing

Directions

  1. In a bowl, add the green chilli, red pepper, tomato, cabbage, cilantro and rice noodles (tip: cut the noodles using a clean kitchen scissors into small strips for an easy mixture).
  2. Mix the above ingredients gently and add some soy sauce and mix it again.
  3. In a heated frying pan, add some oil, pinch of hing, green beans, honey, mustard and ginger powder. Mix the ingredients and let it cook for 2 mintues.
  4. Add the cooked beans, toasted peanuts and 2 small lime juices to the salad. Mix the salad using a salad fork until all the ingredients are mixed well.
  5. Lastly, add chilli paste (to taste) and soy sauce (to taste), stir the mixture and serve.
